At origin, the work does not end when the coffee cherries are harvested. Processing becomes another important stage of the journey. Fermentation, drying and preparation can significantly influence the final profile, making careful documentation essential for understanding what makes each lot different.

2. The People Behind Every Harvest

A great coffee begins with people. In the communities surrounding Inzá, producing specialty coffee requires patience, knowledge and a deep understanding of the land. From preparing the farm to selecting cherries at harvest, growers make countless decisions that ultimately shape the character of each lot.

For many families, coffee represents both an economic activity and a connection to their territory. Farms are often managed through knowledge passed between generations, combining traditional practices with new approaches to quality, processing and traceability.

This is why traceability matters. Knowing the family, farm, process and journey behind a coffee allows buyers to move beyond a simple description of origin. It creates a clearer picture of the work involved and provides a stronger connection between producers and the people who eventually prepare and enjoy their coffee.

Every harvest is the result of a place, a process and a community. Our role is to help make that story visible.

1. From the Mountains of Inzá: Coffee, Community and Origin

In the highlands of Inzá, Cauca, coffee is more than a crop. It is part of a territory shaped by families, mountains, Indigenous communities and generations of agricultural knowledge. Every harvest begins long before the coffee reaches the roastery, with the work of growers who carefully cultivate their farms across the Andean landscape.

The altitude, climate and diverse ecosystems of Tierradentro create distinctive conditions for producing specialty coffee. But behind every lot there is also a human story: decisions made during harvest, careful selection of ripe cherries, traditional processing methods and the constant effort to protect the quality of the coffee.

At La Orquídea y el Oso, we believe that origin should be more than a name on a bag. It should be something that can be understood, explored and connected to the people and places behind the coffee. Through our Origin Hub, we work to make this journey more visible, bringing together information about growers, farms, processing and the characteristics of each lot.

For coffee buyers and roasters, this creates a closer relationship with origin. For producers, it provides an opportunity to show the value of their work and the particular qualities of their harvests.

From the mountains of Inzá to the final cup, every lot carries a story worth knowing.

Certification Begins at Origin

Inzá, Cauca · Colombia

A coffee’s quality can be measured in the cup. Its origin, however, must be understood through the work behind it.

In the mountains of Inzá, Cauca, coffee is produced by smallholder families whose knowledge of the land shapes every harvest. For La Orquídea y el Oso, documenting that origin is not an additional layer of the coffee trade. It is part of understanding the coffee itself.

Beyond a Certificate

Certification should mean more than a document.

Our approach connects each certified lot to the people, place and processes behind it. Farm information, harvest practices, processing methods and quality results become part of a traceable origin record.

This creates a clearer connection between the producer at origin and the buyer at destination.

Three Dimensions of Verification

Our Certified Origin Program focuses on three fundamental dimensions:

ORIGIN
Where the coffee was grown, who produced it and how its place of origin can be documented.

PROCESS
How the coffee was harvested, processed and prepared, with information preserved throughout the journey.

QUALITY
How the resulting coffee performs through structured evaluation and cupping, creating a measurable link between origin and cup profile.

Together, these dimensions turn origin into something that can be understood, documented and verified.

From Inzá to the World

Every certified lot begins with a specific place.

In Inzá, that may mean a small farm in the mountains of Tierradentro, a family working across generations, or a producer refining a process to express the character of their harvest.

Our role is to preserve that information and make it accessible.

Because when a buyer can trace a coffee back to its origin, certification becomes more than a label.

It becomes proof.

La Orquídea y el Oso works to make Colombian coffee more transparent from the farm to the final destination — connecting quality, origin and the people behind every lot.

Coffee pickers harvesting ripe red cherries in the hills of Inzá

Every harvest begins with people. This year, the families of Inzá gathered at dawn to open the picking season, as they have done for generations, and this time with a shared plan for the months ahead.

A season built together

More than [number] families from [number] farms took part in the first week of picking. Each one brought its own rhythm and knowledge: when a cherry is truly ripe, how to sort by hand, and how to care for the soil that feeds the crop.

«The harvest is not only coffee. It is the moment the whole community meets.» — [Name], producer, Inzá

What we are working on

  • Fair and transparent prices agreed with producers before the season starts.
  • Training in selective picking to improve cup quality and reduce waste.
  • Shared processing spaces so smaller farms can reach the same standard.
